History

Les Soufflés d’Excoffier is a restaurant founded by childhood friends Sasha Excoffier and Nicolas de Briey. Inspired by his father, chef Philippe Excoffier, Sasha, a Ferrandi graduate and former member of Guy Martin's team, developed a passion for French gastronomy, particularly soufflés.

The project took shape during the Covid period, when Sasha perfected his technique. Nicolas, then studying economics and diplomacy, joined the adventure, bringing his expertise in management and financing. Together, they created Les Soufflés d’Excoffier, combining gastronomic expertise and innovation.

Our restaurant's goal is to elevate the soufflé to the status of a staple of French ready-to-eat cuisine.
